Teriyaki Salmon Soba Bowl


Teriyaki Salmon Soba Bowl

High heat, 20-30 minutes, Serves 2

Ingredients:
Salmon teriyaki –
¼ tsp garlic powder
½ tsp ground ginger
½ tsp ground mustard
1 tbsp sugar (white or brown)
2 tsp sesame seeds (white and/or black)
2 tbsp lemon juice
2 tbsp sesame oil
2 tbsp low sodium soy sauce
12 oz salmon, sliced into 1cm fillets
1 tbsp canola oil

Noodle base –
⅓ cup low sodium soy sauce
¼ cup tahini
2 tbsp sesame oil
1 tbsp grated ginger
1 bundle (~3oz) soba noodles

Vegetables –
½ head broccoli, cut into small florets and blanched
1 carrot, julienned
For garnish: thinly sliced scallions + toasted sesame seeds + cilantro

Directions:
1. Mix salmon marinade ingredients in a medium sized bowl. Add salmon fillets and let marinate for 15 minutes.
2. Cook soba noodles according to package directions. Rinse in cold water and mix in noodle marinade ingredients. Set aside.
3. Blanch broccoli in boiling water for 30-60 seconds, shocking in ice water to stop cooking. Set aside.
4. In a pan set over high heat, add oil and pan fry marinated salmon for approx. 1 minute per side or until nicely charred and salmon tender.
5. Assemble bowl, noodles on bottom, topped with salmon and veggies. Garnish with scallions, sesame seeds and sesame oil. Serve and enjoy!
