Steelhead Bruschetta

Ingredients:
24 Basil leaves, half thinly sliced, half for garnish
4 roma tomatoes diced
4 ounces De La Mer smoked steelhead
3 cloves garlic, minced
1/2 cup olive oil
Parmesan, shaved
Salt and pepper to taste
Baguette

Directions:
1. Slice baguette on the bias and toss with half of the olive oil.
2. Toast the bread in the oven for 10 minutes at 375° or until golden brown.
3. Mix together sliced basil leaves, tomatoes, steelhead, garlic, and olive oil. Season to taste.
4. Add a generous serving of the mixture to baguette slices and garnish with fresh shaved parmesan and whole basil leaves. Enjoy!
