One-Pan Red Snapper Fajitas


One-Pan Red Snapper Fajitas

High heat, 30 minutes, Serves 3-4

Ingredients:
1 large white onion, sliced
1 red bell pepper, seeded and sliced
1 orange bell pepper seeded and sliced
2 tbsp canola oil
Salt and black pepper, to taste
2 lb red snapper fillets
3 tbsp Bonefish blackening rub
2 tbsp canola oil
Zest and juice of 1 lime

Fajita fixings:
Corn (or flour) tortillas
Sour cream
Avocado
Lime wedges
Cilantro

Directions:
1. With a paper towel pat fish dry. Season with blackening rub and cover with oil. Set aside.
2. Preheat grill (or grill-pan) over high heat. While preheating, in a medium sized bowl, toss vegetables with oil + salt & pepper to taste. Add to grill pan and sauté for 3-5 minutes or until beginning to char.
3. Push vegetables to edge of pan and place seasoned fish. Grill 2-3 minutes per side until cooked and flaking nicely. Remove from heat, top with lime zest and finish with lime juice.
4. Serve family style with tortillas and toppings. Enjoy!
