Clam Linguine


Clam Linguine

Makes 4 dinner portions

Ingredients:
1/3 cup extra-virgin olive oil
1 medium onion, chopped
6 garlic cloves, finely chopped
1 tsp dried hot red pepper flakes
1/2 tsp dried oregano
1/2c white wine
1 small bottle clam juice
1c. heavy/whipping cream
1 box linguine
2lb littleneck or pasta clams, well scrubbed
2 tbsp unsalted butter
1/3c chopped fresh flat-leaf parsley

Directions:
1. In medium to large sauce pan sauté clams, onion, garlic, pepper flakes and oregano until garlic, onions and clams shells are lightly browned.
2. Add wine and clam juice and deglaze.  Cover and steam clams until they open (8-10 minutes), discard any unopened ones.
3. Remove the clams from the pot and cover to keep warm, add cream to the remaining liquid and reduce by half.
4. Meanwhile in a 10L pot, cook the linguine in well salted water.  Add linguine to the water once it has come to a full boil and cook for 6 minutes or desired doneness.
5. Pour sauce over cooked linguine and toss.
6. Serve in shallow bowl and arrange clams on top of the pasta.  Sprinkle with chopped parsley.
