Ceviche with Cilantro and Lime
Ingredients:
1/2 cup diced roma tomatoes
1/2 cup diced english cucumber
1/4 cup diced green onion
Medium avocado cubed
2 jalapenos seeded and diced
1 clove minced garlic
Juice of 4 limes
1 tbsp kosher salt
2 cubed tilapia fillets
2 tbsp of cilantro
Directions:
1. In a large bowl, mix together tomatoes, cucumber, green onion, cilantro, and garlic and season to taste with kosher salt.
2. Pit and cube the avocado, carefully deseed jalapenos and dice. Mix together with tilapia and lime juice.
3. Let rest in the fridge for 45 minutes. Serve with blue corn tortilla chips or fresh tortilla wraps for the perfect appetizer!
