Mediterranean Braised Cod
2lb cod fillet
1 red pepper, julienned
1 white onion, julienned
¼ cup white wine
¼ cup capers
½ cup pitted Kalamata olives 1 lemon, halved
½ pint cherry tomatoes
Sauté and caramelize the onions and peppers, deglaze the pan with white wine.
Place cod in lightly oiled oven proof dish. Add capers, olives, lemon, tomatoes (if desired) peppers, onions and liquid. Cover with aluminum foil.
Place dish in 350˚preheated oven and bake for 20 minutes. Serve over rice or with bread and enjoy!
